Here’s a Vinaigrette Recipe that you can vary by changing the fruit – blueberry, raspberry, or strawberry – don’t be afraid to use all three! There are many creative ways to add fruits into your diet

 Another,  is to use the vinaigrette to marinate chicken. Leave for 2 hours (or overnight for even more flavor) in the refrigerator then broil, bake or pan fry in good olive oil. Toss the chicken in the salad or serve on the side.

In a blender or food processor, combine all dressing ingredients except the oil and shallots and process until smooth.  Slowly add in the oil and blend until dressing has a thick consistency.  Stir in shallots.Chill dressing until ready to serve salad.

BALSAMIC VINAIGRETTE

Ingredients:
1/3 cup fresh fruit (choose a berry or berry combination)
1 tablespoon balsamic vinegar
2 teaspoons Dijon mustard
1 tablespoon water
1 garlic clove, minced
Salt and freshly ground black pepper to taste
5 tablespoons extra-virgin olive oil
2 tablespoons shallots, chopped (or substitute sweet onion or red onion)
