Potato Salad with Bacon & Barbecue Sauce

Total Time: 1 Hr. 30mins  Active: 45 MIN      Servings: 10

INGREDIENTS

  • 4 pounds small red potatoes
  • ½ pound lean bacon, preferably
    apple-wood smoked, thinly sliced
  • 1 ¼ cups mayonnaise
  • 2 tablespoons barbecue sauce
  • 2 tablespoons mustard oil or spicy mustard
  • 2 tablespoons sherry vinegar
  • 2 celery ribs, diced
  • 1 small red onion, minced
  • ¼ cup chopped parsley
  • 1 tablespoon chopped tarragon
  • Salt and freshly ground pepper
  • ¼ cup onion sprouts, for garnish (optional)

How to make recipe

1.      In a large pot, cover the potatoes with cold salted water and bring to a boil over moderately high heat. Cook until the potatoes are tender, about 35 minutes. Drain the potatoes and, when they are cool enough to handle, slice them in half.

2.      Meanwhile, in a medium skillet, cook the bacon slices over moderate heat until crisp, about 6 minutes. Drain on paper towels and coarsely crumble.

3.      In a large bowl, mix the mayonnaise with the barbecue sauce, mustard oil and sherry vinegar. Fold the potatoes into the dressing while they are still warm. Let the potato salad stand, stirring a few times, until the potatoes have cooled and absorbed most of the dressing, about 20 minutes.

4.      Add the celery, red onion, parsley and tarragon to the potatoes and season with salt and pepper. Let stand for an additional 20 minutes, stirring a few times. Garnish with the bacon and sprouts, then serve.

MAKE AHEAD

The ungarnished salad can be refrigerated overnight. Serve lightly chilled or at room temperature

INGREDIENTS

  • ½ cup plus 2 tablespoons mayonnaise
  • ¼ cup sour cream
  • ¼ cup drained prepared horseradish
  • ¼ cup Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon minced shallots
  • 1 tablespoon minced chives
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground pepper
  • 6 slices Gruyère cheese (3 oz's)
  • 6 all-beef hot dogs, slit lengthwise
  • 6 thin slices of lean bacon
  • 6 hot dog buns

How to make this recipe

1.    Preheat the oven to 425 degrees. In a small bowl, combine the mayonnaise, sour cream, horseradish, mustard, honey, shallots, chives and lemon juice and season with salt and pepper.

2.    Place a slice of cheese in the center of each splayed hot dog, breaking the slice if necessary to fit it in. Wrap a slice of bacon around each hot dog and secure it with toothpicks.

3.    Arrange the hot dogs on a rimmed baking sheet and bake in the upper third of the oven until the bacon is crisp, about 12 minutes. Place each hot dog in a bun and serve, passing the horseradish sauce on the side.

Prosciutto-Wrapped Asparagus + Lemony Bread Crumbs

Total Time: 35 MIN     Servings: 6

INGREDIENTS

  • 1 pound thin asparagus
  • 1 tablespoon extra-virgin olive oil, plus more for brushing
  • Kosher salt
  • Freshly ground pepper
  • ¼ cup plain dry bread crumbs or panko
  • 1 garlic clove, minced
  • 1 tablespoon freshly grated Parmigiano-Reggiano cheese
  • 1 tablespoon minced flat-leaf parsley
  • 1 teaspoon finely grated lemon zest
  • 12 thin slices of prosciutto (you can substitute any sliced ham.

How to make recipe

1.      Light a hardwood charcoal fire. Brush the asparagus with olive oil and season with salt and pepper. Grill the asparagus over moderately high heat, turning, until lightly charred and almost tender, 4 minutes. Transfer to a plate and let cool.

2.      Meanwhile, in a small cast-iron skillet, heat the 1 tablespoon of olive oil. Add the bread crumbs and garlic and cook over moderately high heat, stirring, until the crumbs are golden and crisp, 4 minutes. Remove from the heat and let cool slightly, then stir in the Parmigiano-Reggiano, parsley and lemon zest; season with salt and pepper.

3.      Divide the asparagus into 6 even piles. On a work surface, arrange the prosciutto slices in 6 pairs, overlapping slightly. Set an asparagus pile on each prosciutto pair and roll up.

4.      Grill the bundles over moderately high heat, turning, until the asparagus are tender and the prosciutto is crisp, 4 minutes. Transfer to a platter. Sprinkle the lemony bread crumbs on top and serve.

Old Bay Hot Wings

INGREDIENTS

  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon Old Bay seasoning
  • 2 pounds chicken wingettes & drumettes*
    2 ½ tablespoons red hot sauce, preferably
    Frank's Red Hot
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons Worcestershire sauce

*NOTES:
Wingettes and drumettes are often sold separately

How to make recipe

1.      Preheat the oven to 500 degrees. Line a large baking sheet with foil and spray with vegetable oil. In a bowl, mix the flour with the salt and Old Bay seasoning. Add the chicken and toss to coat. Spread the chicken on the baking sheet in a single layer and spray with vegetable oil. Roast the chicken for 45 minutes, turning once or twice, until browned and crispy.

2.      In a bowl, toss the chicken wings with the hot sauce, butter and Worcestershire sauce; serve.

  • 1 tablespoon packed light brown sugar
  • 1 teaspoon granulated sugar
  • 1/8 teaspoon pure vanilla extract
  • Maldon salt
  • 2 tablespoons all-purpose flour
  • 1 ½ tablespoons dark chocolate chunks or chips

How to make this recipe

  1. Preheat a toaster oven to 350°.
  2. In a small microwave-safe bowl, heat the butter until just softened, about 10 seconds.
  3. Using a fork, blend in both sugars, the vanilla and a pinch of salt.
  4. Blend in the flour, then stir in the chocolate chunks.
  5. Scoop the batter onto a parchment paper–lined toaster tray and sprinkle with salt.
  6. Bake for 13 to 15 minutes, until lightly browned. Let cool slightly before serving.

The Germany-based airline lufthansa will serve its first & business-class passengers drinks made using the Ripple Maker

The machines began shipping in October, 2015 with a price tag of $999, includes service plans of $75 per month (including Ripple Pods, service and warranties), the app is free to customers.  Initially The Ripple Maker is intended as a B2B product  targeted at coffee shops, hotels and such.  Lufthansa will be its first global partner. The Germany-based airline will serve its first and business-class passengers drinks made using the Ripple Maker this year, adding another personal touch to it's service.

A Port in the Storm Recipe: makes 48 mini cupcakes

Frosting:
1 cup butter at room temperature
2 cups powdered sugar
¼ brewed espresso
½ tsp espresso powder

Filling:
4 oz Divine milk chocolate
1/3 cup heavy cream
½ cup tawny port
1 tbsp unsalted butter

Ingredients:  For Cake:
½ cup coffee stout
½ cup butter, unsalted
3 tbsp dark cocoa powder
1 egg
1/3 cup sour cream or full fat plain yogurt
½ cup flour
4/5 cup sugar
¾ tsp baking soda
½ tsp salt


Directions:  For Cake:
1. Preheat oven to 325°F
2. In an electric mixer, beat eggs and sour cream
3. In another bowl, combine flour, sugar, baking soda, and salt.
4. Combine beer and butter in a small saucepan, heat until butter melts.  Remove from heat and whisk in cocoa powder.
5. While mixer is running, slowly pour in hot cocoa/butter mixture.  Mix until fluffy and incorporated.
6. Slowly add dry goods to wet and beat until incorporated.
7. Fill lined cupcake tins 2/3 with batter. Bake for 10 minutes and let cool on a rack.

For filling:
1.Simmer cream over medium heat until just bubbling.  Take care not to boil over.
2. Meanwhile, chop the milk chocolate into chunks and transfer into a bowl.
3. When cream is heated pour over room temperature chocolate.
4. Let chocolate and cream mixture sit for a minute or so, then whisk. When smooth, add the butter. Ganache should be glossy.
5. While whisking, stream in port until incorporated. Transfer to a squeeze bottle.

For Frosting:
1. In an electric mixer, beat butter with paddle until fluffy.
2. On low speed, add the powdered sugar.
3. Slowly stream in espresso and beat until smooth.
4. Stir in espresso powder and transfer to a piping bag.

Assembly:
1. When cupcakes are cool, use a small pastry tip to core out the center.
2. Fill the cupcakes with the port ganache, using a squeeze bottle.
3. Frost the cupcakes to your liking.

YIELD: Makes about 2 dozen 1 1/2-inch balls

– Ground beef (2 pounds)
– Eggs (2)
– Salt (2 1/2 teaspoons)
– Bread crumbs (1/2 cup)
– Chili flakes (pinch)
– Fennel seed (pinch)
– Fresh parsley, chopped (1/4 cup)
– Fresh oregano, chopped (1/4 cup)
– Ricotta cheese (2 ounces)
– Olive oil

Preparation

THE STEPS

1. Combine the ground beef, eggs, and salt in a bowl.

2. Add the bread crumbs, chili flakes, fennel seeds, parsley, and oregano.

3. Add the ricotta cheese.

4. Mix the meat mixture with both hands.

5. Line a baking sheet with parchment paper or lightly coat it with oil.

6. Before forming all the meatballs, cook one meatball in a frying pan with olive oil for around two minutes. Once cooked,
    taste to make sure the meat is seasoned properly. Adjust seasoning as necessary.

7. Portion the meatballs by scooping the meat with an ice cream scooper. This will ensure that all the meatballs are a
   similar size, about two ounces.

8. After the meat has been portioned out, form the meatballs by rolling them between both hands.

9. Place the meatballs in a 425 degree oven for about 17 to 20 minutes. Once cooked, serve with tomato sauce or use as
    otherwise desired.

Anthony Bourdain’s Boeuf Bourguignon

“This dish is much better the second day. Just cool the stew down in an ice bath, or on your countertop (the Health Department is unlikely to raid your kitchen). Refrigerate overnight. When time, heat and serve. Goes well with a few boiled potatoes. But goes really well with a bottle of Cote de Nuit Villages Pommard.”

INGREDIENTS

 
 

Tested size: 6 servings

  • 2 pounds beef shoulder or neck, cut into 1 1/2-inch pieces
  • Salt and freshly ground black pepper
  • 1/4 cup olive oil
  • 4 onion, thinly sliced
  • 2 tablespoons flour
  • 1 cup red burgundy
  • 6 carrots, cut into 1-inch pieces
  • 1 clove garlic
  • 1 bouquet garni (a tied bundle of herbs, usually thyme, bay and parsley)
  • A little chopped flat-leaf parsley

DIRECTIONS

Stage One: Season the meat with salt and pepper. In a Dutch oven, heat the oil over high heat until it is almost smoking. Add the meat in batches — NOT ALL AT ONCE! — and sear on all sides until it is well browned (not gray). You dump too much meat in the pot at the same time and you’ll overcrowd it; cool the thing down and you won’t get good color. Sear the meat a little at a time, removing it and setting it aside as it finishes. When all the meat is a nice, dark brown color and has been set aside, add the onions to the pot. Lower the heat to medium high until the onions are soft and golden brown (about 10 minutes). Sprinkle the flour over them. Continue to cook for about 4 to 5 minutes, stirring occasionally, then add the red wine. Naturally, you want to scrape up all that really good fond from the bottom of the pot with your wooden spoon. Bring the wine to a boil.

Stage Two: Return the meat to the pot and add the carrots, garlic and bouquet garni. Add just enough water (and two big spoons of demi-glace, if you have it) so that the liquid covers the meat by one-third — meaning you want a ratio of 3 parts liquid to 2 parts meat. This is a stew, so you want plenty of liquid even after it cooks down and reduces. Bring to a boil, reduce to a gentle simmer, and let cook for about 2 hours, or until the meat is tender (break-apart-with-a-fork tender).

 

 

You should pay attention to the dish, meaning to check it every 15 to 20 minutes, stirring and scraping the bottom of the pot to make sure the meat is not sticking or, God forbid, scorching. You should also skim off any foam or scum or oil collecting on the surface, using a large spoon or ladle. When done, remove and discard the bouquet garni, add the chopped parsley to the pot, and serve.

Originating in Japan, this gadget is starting to become really popular, creating healthy curls of vegetable and fruit noodles for quick, satisfying healthy meals.  You can use Zucchini, cucumbers, potatoes, apples and pears for example.

Basil Pomodoro Zucchini Pasta
with Chicken

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Servings: 2

 

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1/2 pound boneless chicken breasts, roughly cubed
  • salt and pepper, to taste
  • 1/4 teaspoon garlic powder
  • 1 large clove of garlic, minced
  • 1/3 cup diced white onions
  • 1 14oz can diced tomatoes (or crushed tomatoes) with juices
  • 1-1.5 tablespoon chopped basil
  • 2 medium zucchinis, Blade C, noodles trimmed

Instructions

  1. Place a pot/saucepan over medium heat and add in the olive oil. Once the oil heats, add in the chicken. Season with salt, pepper and garlic powder. Cook for 3 minutes and then flip over, cooking another 3-5 minutes or until chicken is cooked through and no longer pink on the inside.
  2. Then, add in the garlic and onions and cook for 2-3 minutes or until onions start to soften and become translucent. Then, add in the canned tomatoes and roughly crush the tomatoes with a potato masher or the back of a fork. Bring to a boil and then reduce heat and simmer. Season with salt and pepper and let cook for 5 minutes, add in the basil and cook for another 5-10 minutes or until most of the liquid has evaporated and it is thicker, suitable for cooking with zucchini noodles. Add in the zucchini noodles and toss for 2-3 minutes or until noodles are al dente.
  3. Divide into bowls.
